4 Butternut whole
2 tbsp cinnamon
2 tbsp butternut spice mix
4 tbsp Honey
4 tbsp Olive oil
100 g rocket
100 g pomegranates
1. Preheat the oven at 180 °C and line a baking tray with baking paper.
2. Peel butternut, cut into wheels 10 cm thick and deseed.
3. Place on baking tray and season with honey, cinnamon and butternut
spice mix and roast for 40 min or until golden and cooked through.
4. Serve hot and top with rocket and pomegranates.
Serve with sirloin steak as a side dish. Quantities can be halved for serving of 6.
