Spicy Grilled Corn on the Cob

Ingredients

4 Corn on the cob cleaned

½ Lemon

½ tsp salt

½ tsp black pepper

1 tsp cayenne pepper

1 tsp ground cumin

2 tbsp Olive oil

¼ Red onion sliced

1 Hand full of chives chopped

50 g of Goats cheese

Method

  1. Preheat the oven at 180 °C and line a baking tray with foil paper.
  2. Add water to a pot and bring to a boil, then add clean cobb and boil for 10 min.
  3. Season pre- cooked corn with olive oil, cayenne pepper, cumin, salt and pepper.
  4. Place corn onto the baking tray or barbeque and grill until they turn brown, make sure to turn frequently every 5 min to prevent corn from burning.
  5. After cooking, top with goats cheese, chives, onion, lemon and fresh pomegranate pearls (optional).

Notes

It can be a healthy meatless addition to barbequing, a delicious dinner side dish.
