Sweet Potato Cakes

Ingredients

1 large orange sweet potato

1 large egg

Olive/coconut oil spray for a baking tray

½ tsp Allspice

½ tsp Curry powder

½ tsp Dried thyme

Pinch of salt and pepper

½ cup Almond flour/ Oat flour (GF)

Method

  1. Preheat oven at 180 C. Line a baking tray with baking paper and spray or use a paper towel with olive oil to wipe baking paper with olive/coconut oil.
  2. In a medium bowl whisk together egg, spices, salt and pepper.
  3. Mix in almond flour to egg mixture until well combined, set aside.
  4. Peel sweet potato and microwave for 5 minutes until soft.
  5. Mash sweet potato with a fork until smooth then add to egg mixture and stir until well combined.
  6. Scoop 4 tablespoons of mixture onto the tray and flatten with a spatula and spray with olive oil. Repeat until the whole tray is covered and the mixture is done.
  7. Bake for 15 min then take out and turn sweet potato cakes around and bake for another 10 min.
  8. Serve hot with a topping of choice listed below.
  9. Store in an airtight container for up to 7 days in the refrigerator.

Notes

Add coconut yogurt, toasted walnuts and honey as a sweet topping or sriracha sauce and goats’ cheese as a savoury topping.
