Ingredients

Base

½ Cup seeds

2 ½ cups coconut milk

½ cup blended blueberries

1 tsp vanilla bean extract (optional)

Topping

1 tbsp toasted nuts of choice or seed mix

1 tsp coconut sugar

1tbsp Fresh blueberries

Toasted coconut flakes

Method

  1. Blend coconut milk and blueberries together in a blender of choice (Nutri -bullet)
  2. In an airtight container add chia seeds and coconut milk/blueberry mixture together and leave in the refrigerator for 4-8 hours over night preferably.
  3. Take out the following day and top with nuts, coconut sugar, coconut flakes and fresh blueberries.

Notes

It can be enjoyed with various toppings, and flavours can play around with seasonal fruit similar to overnight soaked oats.
