Berry Coconut Overnight Soaked Oats

Ingredients

3 Cups Oats
2 Cups Coconut milk
2 tbsp Chia seeds
2 tbsp Linseeds
2 tsp Coconut sugar Berry-coconut flavour
2 tbsp Frozen or fresh berries
2 tbsp coconut yogurt

Topping
Fresh seasonal berries
Toasted nuts and seeds/granola 1 tbsp Coconut yogurt

Method

  1. Add all ingredients except the toppings in an airtight container and mix well until combined.
  2. Close with lid and place in refrigerator for 6-8 hours, overnight.
  3. Next morning dish 1 cup of oat mixture and add toppings

Notes

Vanilla or Berry flavoured coconut yogurt works well with toppings. Use seasonal fresh fruit as a topping (Kiwi or mangoes also work well for summer time).
