Hummus Shakshuka

Ingredients

4 Eggs/ 4 Falafels

2 Cans Chopped tomatoes

2 Tomatoes diced

½ Onion diced

4 tbsp Olive oil

Juice of ½ lemon

2 tbsp Amba sauce

1 tsp Zhug

Salt and pepper to taste

½ Red pepper diced

2 Pita bread/flat bread (GFO)

Topping

200 g Hummus (Yalla Bala)

1 tsp Zhug

2 tbsp Tahini

½ cup Chopped fresh mint and parsley

Method

  1. Add oil in a non-stick medium size pan with and fry onions on a medium heat until translucent ± 3 min.
  2. Add diced red pepper and fry for another 3 min before adding diced tomatoes, amba sauce, zhug and ½ lemon juice and cook for another 4 min.
  3. Add can tomatoes and let the sauce simmer with lid on for 8 min.
  4. Make small pockets in sauce and break eggs one by one into pockets you have made/ can be replaced with falafels if not using eggs.
  5. Season eggs with salt and pepper and add small amount of zhug to each egg.
  6. Cook to your preference soft, medium or well done 5 -8 min, place lid on pan for last 2 minutes.
  7. Serve with side dish of hummus, tahini, pita/flatbread.

Notes

Eggs can be replaced with falafels for a vegan alternative
