Gluten-Free Naan Bread

Ingredients

¼ cup Natural Coconut yogurt (COYO)

½ cup Organic Coconut milk

1 tsp olive oil

2 tbsp coconut oil for frying/olive oil

1 cup Gluten-free self-raising flour (Bobs Red Mills)

½ cup Coconut flour

½ tsp Salt

Method

  1. In a large mixing bowl, add coconut yogurt, salt, coconut milk, olive oil and mix until well combined.

  2. Add GF self-raising flour, coconut flour and fold through until combined.

  3. Add a bit of GF self-raising flour to the surface and hands to prevent dough from sticking.

  4. Roll mixture into 4-5 small ball sized dough pieces using hands.

  5. Roll out dough with a rolling pin on a flat surface sprinkled with GF self-raising flour.

  6. Heat a cast-iron pan/ non-stick pan over medium heat and add 2 tbsp of coconut oil/olive oil.

  7. Place dough in a hot pan and fry for ± 2 min on a side until lightly golden in colour.

  8. Serve hot as a side to my Lentil curry, Mediterranean or Quinoa salad.

Notes

Can be served with chopped parsley, olive oil and fresh garlic.
