Ingredients

½ English cucumber thinly sliced

½  Small red onion peeled and thinly sliced

2 Tomatoes diced

½ cup Chopped fresh mint and parsley

1 Avocado cut diced

12 Falafels (Yalla Bala)

¼ Red cabbage sliced finely

4 Corn Taco shells of Tortilla

Dressing:

4 tbsp Olive oil

Juice of ½ lemon

2 tbsp Amba sauce

1 tsp Zhug

Salt and pepper to taste

Topping

4 tbsp Tahini

4 tbsp Hummus

Sliced lemon

 

Method

  1. Preheat the oven to 180 °C and line a baking tray with baking paper.
  2. To make dressing put all ingredients in a blender and mix until combined and set aside.
  3. Place falafels on baking tray and bake for 8 min until heated through, place tortillas in oven/ corn tortillas to heat up 5 min.
  4. Chop all vegetable dice avocado and combine with dressing in a separate bowl.
  5. Take out tortilla’s/Taco shells and falafels and start assembling tacos.
  6. Dish serving of vegetables with 3 falafels in each taco topped with tahini, hummus, cabbage and pickled vegetables (optional)

Notes

Pita can also be used instead of corn tortillas.
