3-5 Large carrots
1tbsp Olive oil
1 fresh lime
1tsp Apple cider vinegar
½ tsp ground coriander
1/8 tsp Cayenne pepper (optional)
¼ tsp kosher salt
Optional add-ons:
2 tbsp chopped parsley
2tsp sesame seeds
1 tbsp chopped cilantro or mint
